I’ve been waiting to post this recipe literally since the moment I took this photograph – since 6 a.m.
Busy life hahahah
- 1 cup corn flour
- 2/3 cup almond flour (make sure you press it down a little, while measuring, to get an accurate measurement)
- 1/2 cup sparkling water
- 1/2 cup plant milk of choice (might also be cow milk I guess)
- 1 teaspoon baking powder
- 1/3 cup xylitol
- 3-4 tablespoons coconut oil
- 3 eggs (whites and yolks separated)
Put all the dry ingredients in a bowl. Add egg yolks, water and milk, and stir thoroughly. Add the oil too. Beat up the egg whites until stiff. Gently stir them into the batter. Stir in the berries.
Transfer the batter into baking molds – silicone/paper or any other you usually use.
Bake in 180ºC for about 15-17 minutes (just observe, you’ll see when they are ready).
