I have a nice healthy basic recipe for you, which I thought might come in handy at some point, so here you go.
- 1 cup rice flour
- 2/3 cup corn flour
- around 135g butter (unsalted and chilled)
- 1/3 cup xylitol
- 1 egg
- 250g mascarpone
- a few tablespoons natural yogurt or cream
- 2-3 tablespoons cocoa powder
Put flours, xylitol and butter (chopped into small cubes) in a large bowl. Chop the ingredients with a knife first and then knead them with fingers until they resemble bread crumbs. Add an egg and mix everything thoroughly.
Place the dough on a baking pan, spread it uniformly. Bake around 15 minutes in 190°C.
In another bowl, combine mascarpone, cocoa powder, a bit of yogurt/cream and honey. Using an electric mixer, beat on medium speed until smooth. Taste and see whether it is sweet enough (if not, add more honey), and whether the texture is good (if you want the filling to be less dense, add more yogurt/cream).
When the crust cools down, fill it with the mascarpone mass and top with some fruit.
Chill in the fridge.
